JD Fratzke (he/him)

Culinary Director

JD Fratzke is a native of Winona, MN and has been an award-winning hospitality professional for over three decades. In addition to his leadership roles in establishments such as Chino Latino, The Strip Club Meat & Fish, and Falls Landing, JD has contributed to the culinary programs for over dozen establishments in greater Minnesota and appeared as a judge and mentor in season sixteen of Bravo TV’s reality show Top Chef.

An avid outdoorsman and wilderness advocate, JD’s writing has appeared in the Saint Paul Pioneer Press, The Growler and the anthology Under Purple Skies.

Kitchen Steward

Jon comes to us from Bachelor Farmer and Heartland restaurants. During his 10+ years in the service of those establishments, he came to value food sourcing ethics and transparency to people about what they are eating. He’s happy to be a part of GreenDish because we share those values, and because Jon thinks being around food is the only kind of job that seems fun to him. He is also a great cook at home and an extremely amateur mushroom hunter.

Patrick is a multi decade hospitality professional and competitive BBQ champion. He has been in charge of the culinary programs in several restaurants in St.Paul MN. He is also known as a maniacally devoted Steely Dan fan with a lovely singing voice.

Alex Mosher (he/him)

Prep and Line Chef

Most recently Alex helped to run the kitchen of a local winery and is a barbecue aficionado, likes hunting and fishing, and spends a lot of time in the woods of northern MN with family. Alex enjoys organic gardening and has dedicated his home office to an indoor grow tent so he will always have fresh herbs on hand. There’s a desk and chair in there too, but really it’s mostly plants.

Dani is a long time twin cities hospitality professional, and owns her own food truck and catering service, called Fresco’s Foods. She is spearheading GreenDish’s catering program.

A stint at MCAD let Brittany to realize that love of cuisine was one of her top artistic passions. Now she is finishing up her degree from Saint Paul College Culinary Arts Program. We’re lucky to have her on the GreenDish team!

Jake is an outdoorsman and accomplished forager. He cooks at Owami under the mentorship of Chef Sean Sherman, and here at GreenDish.

Stephanie has a portfolio career and can do seemingly anything! Having been to culinary school, worked as a bartender, and in the front of the house, you’ll see her rocking the GreenDish kitchen on the weekends.

Jake is a long time industry veteran who has worked with Chef JD in his previous ventures. Moving back to the Twin Cities from sunny Puerto Rico, he is a solid team player who both cooks and drives for GreenDish.

Marketing Maven

A dot-commer with roots in both Minneapolis and the Bay Area, Heather has a breadth of experience in the digital marketing, branding, and SAAS spaces. But she started as a cook at the Birchwood Cafe, so hopping aboard the GreenDish team was a perfect marriage of interests. Do not ask her about her dog unless you have 20 minutes to spare.

Marketing Outreach

Felicia is a local mom who tried GreenDish and loved it. Now she is bringing her skill set to help us market our newer services, like catering and lunch.

Certified Nutritionist

Kate helps us with guidelines for what healthy should mean, and with our nutrition labels for the GreenDish food.

Sue believes that food can change everything. Her passion for health and helping others in their journey to wellness is part of the inspiration for founding GreenDish.
